End Fridge Salade

This salad is pure student survival energy, but make it tasty. It’s what happens when you grab whatever’s left in the fridge and somehow end up with a colorful, crunchy, surprisingly delicious bowl of goodness. No fancy ingredients, no rules, just vibes and veggies. The little guac-style dressing pulls it all together like magic. It’s cheap, quick, and honestly kind of genius.

Ingredients

  • Iceberg lettuce (or whatever salad greens you’ve got)
  • 1 carrot
  • 3 radishes
  • 1 tomato
  • ½ cucumber
  • ½ red bell pepper
  • 1 avocado
  • 1 red onion
  • Lemon juice
  • Optional: Chives

Instructions

  1. Chop and layer the base
    Slice up your lettuce and toss it into a big bowl. Grate the carrot, slice the radishes, tomato, and cucumber, and add them in. Dice the red bell pepper and mix that in too.
  2. Add the avocado
    Slice half the avocado and drop it into the salad. The other half? That’s your dressing.
  3. Make the “guac” sauce
    In a small bowl, mash the remaining avocado with a squeeze of lemon juice and some finely chopped red onion. Add chives if you’ve got them; it’s optional but adds flavor!
  4. Mix & enjoy
